Taco Tuesdays Just Got a Little Tastier....

If you're like me, you love Mexican food, but sometimes a basic ground beef taco just isn't gonna cut it! When my sister Emily made me this casserole for Sunday dinner, my world was changed. Since then, it's been a go to favorite! This recipe comes from Six Sister's Stuff, one of my favorite food blogs that you'll probably see much, much more of!

Chicken Taco Casserole from Six Sister's Stuff

If you love a good taco, you'll love this recipe! All of your favorite ingredients put into one incredible 8.5 X 11 pan! If you're not grabbing fifths, you're doing it wrong!


INGREDIENTS

- 2 (10.75 ounce) cans cream of chicken soup

- 1 1/2 cups sour cream

- 1 (14 ounce) can diced tomatoes and green chilies (Ro-tel)

- 1 (15 ounce) can black beans (rinsed and drained)

- 1 (1 ounce) packet taco seasoning mix

- 4 boneless skinless chicken breasts (cooked and shredded)

- 1 (10 ounce) bag tortilla chips

- 2 cups shredded cheddar cheese (divided)


INSTRUCTIONS

1. Preheat oven to 350 degrees.

2. Lightly grease a 9 x 13 inch pan.

3. In a large bowl, combine the chicken soup, sour cream, diced tomatoes, black beans, taco seasoning and chicken. Set aside.

4. Crush chips (I just crush them with my hands) and spread half of them on the bottom of the pan

5. Spread half of the chicken mixture over the tortillas. Top with 1 cup of cheese. Repeat layers.

6. Bake for 30 minutes, until bubbly and cheese is starting to brown.
